Personally, I like to play on Large Biomes. In my opinion, it gives a more realistic feel to the game, because I feel the default option makes the biomes too small. (Except Ice Plains, they are huge either way).
On my current save, I inhabit extreme hills near a taiga biome, I am planning to transport villagers from a not-too-distant desert biome into the taiga biome and start up a Snow Village.
A name idea for this village I am making is "The Village at the End of the Universe" cause I am planning to start on it when I kill the Ender Dragon, perhaps using Endstone as one of the materials, bonus points if you get the reference.

I agree with the large biomes, and i spend a MASSIVE amount of time exploring, for desert temples, NPC villages, jungle temples ect. I prefer to live in a NPC village in the plaints with a nearby jungle and regular/pine forest for wood. And with the time i invest in exploring those specifications are pretty easy to find.

Same reason as jake - it's annoying to find your perfect biome only to find it 100 blocks wide. I prefer huge biomes to find NPC villages and other structures.

Large biomes. I remake the world until I find a plains/hills/forest biome.
